Bajra Flakes Chivda

Serves: 3–4

INGREDIENTS

  • 2 cups Organic Wisdom Bajra Flakes

  • 1 tbsp cold-pressed oil

  • Β½ tsp mustard seeds

  • 1 tsp cumin seeds

  • 8–10 curry leaves

  • 2 green chillies, finely chopped

  • 2 tbsp roasted peanuts

  • 2 tbsp roasted chana dal (dalia)

  • 8–10 cashew nuts (optional)

  • ΒΌ tsp turmeric powder

  • Β½ tsp red chilli powder (optional)

  • Salt to taste

  • Β½ tsp sugar or jaggery powder (optional)

  • 1 tbsp chopped coriander leaves

  • 1 tsp lemon juice

PREPARATION

  1. Dry roast the Bajra Flakes in a pan on low heat for 3–4 minutes until crisp. Transfer to a bowl.

  2. Heat oil in the same pan and add mustard seeds followed by cumin seeds.

  3. Add curry leaves, green chillies, peanuts, roasted chana dal and cashews. SautΓ© until golden.

  4. Mix in turmeric, red chilli powder and salt.

  5. Add the roasted Bajra Flakes and gently toss until the seasoning coats evenly.

  6. Turn off the heat and add lemon juice, coriander leaves and jaggery powder (if using). Mix well.

  7. Serve warm or allow it to cool completely before storing in an airtight container.

Pro Tip

For extra crunch, roast the Bajra Flakes on low heat instead of frying. Add roasted seeds like pumpkin, sunflower or flaxseeds for an even more nutritious, protein-rich chivda.
