Organic Wisdom’s Millet Noodles
INGREDIENTS
- 1 cup Jowar Rava
- 1 small onion, finely chopped
- 1 green chili, chopped
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1/4 tsp turmeric
- 6–8 curry leaves
- 1.5 cups water
- 1 tbsp cold-pressed oil or ghee
- Salt to taste
- Chopped coriander and lemon juice for garnish
- Optional: mixed veggies (carrot, peas, beans)
PREPARATION
- Dry roast Jowar Rava for 2–3 minutes on medium flame until aromatic. Set aside.
- In a pan, heat oil/ghee. Add mustard seeds, cumin, and curry leaves. Let them splutter.
- Add onions and green chili. Sauté until translucent. Add turmeric and veggies (if using).
- Pour in water and bring to a boil. Add salt.
- Slowly add the roasted Jowar Rava while stirring continuously to avoid lumps.
- Cover and cook on low flame for 5–7 minutes until water is absorbed and the upma is fluffy.
- Garnish with coriander and a dash of lemon juice. Serve hot.
