Lemon Coriander Jowar Idli

Preparation time: 10 minutes (plus 8–10 hours soaking/fermentation)

Cooking time: 15 minutes

INGREDIENTS

  • 2 cups Organic Wisdom Jowar Idli Mix
  • 1 cup water (adjust as needed for batter consistency)
  • Juice of 1 medium lemon
  • 1/2 cup fresh coriander leaves, finely chopped
  • 1–2 green chilies, finely chopped (optional)
  • Salt to taste
  • Oil or ghee for greasing idli molds

PREPARATION

  1. In a large bowl, mix the Jowar Idli Mix with water to make a smooth, pourable batter. The consistency should be like regular idli batter—neither too thick nor too thin.
  2. Add salt to taste.
  3. Stir in the lemon juice, chopped coriander leaves, and green chilies if using. Mix well.
  4. Cover the batter and let it ferment in a warm place for 8–10 hours or overnight. Fermentation will make the idlis soft and fluffy.
  5. After fermentation, gently stir the batter once more.
  6. Grease idli molds with a little oil or ghee. Pour batter into molds, filling them about 3/4 full.
  7. Steam the idlis in an idli steamer or pressure cooker (without the whistle) for 12–15 minutes or until a toothpick inserted comes out clean.
  8. Remove the idlis carefully and let them cool slightly before taking them out of the molds.
